Culver’s to take over former Fatso’s spot on West Eisenhower in Loveland - Loveland Reporter-Herald

A Culver’s restaurant could open as soon as next spring in the West Eisenhower spot formerly occupied by Fatso’s Diner and A&W, according to city documents and franchisee Jason Stentz.

The Loveland location will be Stentz’s first solo venture, though it’s not his first time at the helm. He and his father opened the Fort Collins Culver’s in 2006 when Stentz was 27 years old, followed by the Longmont Culver’s in 2016.

“Some of the most successful Culver’s are in small towns, and we’re really hoping to become an integral part of the community here,” Stentz said.

Culver’s menu is anchored by classic American fare, with cheeseburgers and frozen custard being two of the restaurant’s signatures.

Stentz said he hopes to start demolition of the old Fatso’s Diner building at 1606 W. Eisenhower Blvd. in late July or early August and break ground soon after.

The building was built in 1972 as an A&W, and Stentz said it was briefly under contract to become a Culver’s in 2007, before Fatso’s opened in 2009.

A basement fire forced Fatso’s to close in 2013 — temporarily at first, with co-owner Matt Nelson saying he guessed it would take three months to get the diner back up and running, then permanently, when insurance failed to cover the damages and repairs stalled.

The building has since sat vacant.

Stentz said the Culver’s property will include a new, 4,300-square-foot building with a drive-thru as well as indoor and patio seating options.

Another part of the roughly $2 million redevelopment will be reconfiguring the access from Eisenhower to improve accessibility and comply with requirements from the Colorado Department of Transportation.

Stentz said he is negotiating with Jiffy Lube, the property’s neighbor to the west, as well as the property to the east to create shared accesses.

He said CDOT also will require a narrow median to be built on Eisenhower to limit left turns in front of the site.

“Everything is kind of in the hands of the city and CDOT at this point,” he said.

Culver’s is currently in the site development phase and waiting to submit for building permit review.

Stentz said the restaurant could open its doors as soon as spring 2021.

“It’s going to be a great fit, and I feel like there’s definitely a need for more restaurants on the west side of Loveland,” he said.
